This type of caviar has light grey to dark grey color pearls, hint of silver and it has mild sweet and nutty flavor. Sterlet is the smallest and abundant sturgeon of the Caspian Sea basin. It is suggested to be served alone just remember to serve it on the mother of pearls spoon. The adult Sterlet reaches the length of 100-120cm and the weight of less than 16kg. Despite of its small size, they are among the most flavorful in the sturgeon family along with Sevruga caviar.
