Nature and healthy sturgeon are our priorities because these factors highly influence the quality of caviar. Though there are many different types of caviar, five types of sturgeon produce the best caviar that comes from the Caspian Sea and Black Sea basin. Therefore, these five types of caviar are briefly explained.

Beluga (huso huso) caviar

Beluga is the largest fish of the sturgeon family. Beluga can grow up to 24 feet and weigh 3460 lb and live up to 118 years. It is also one of the most expensive and rare species of sturgeon that lives in the Caspian Sea. Containing the highest nutritional value, beluga caviar is characterized by an intense aroma and fully lacking a fishy odor that seduce the senses and satisfy every gourmet. Beluga caviar ranges in color from a pale-silver or gray to a dark, inky black. It has a unique buttery salted taste. Beluga caviar will be definitely in great demand among high end restaurants, bars, and individuals.

Tip: The best quality caviar, known as “Iranian diamond or Almas,” comes from this particular species.

Ossetra caviar

Ossetra comes from the Russian sturgeon. Its natural habitat is the basins of the Caspian Sea. Many people consider it as the finest-tasting caviar of all with a definite spicy marine taste it is delicious on its own, without any additions or garnishes. The Ossetra sturgeon and eggs are much smaller than the Beluga. It comes in colors of grey, brown and olive with golden highlights.

Siberian caviar (baerii)

Very similar to Ossetra, the roe from the Acipenser baerii, known as the Siberian Sturgeon, is prized for its glossy dark caviar that’s almost indistinguishable from its Caspian cousin. It has nutty rich flavor with hints of sweetness and a fabulous buttery texture. The Siberian sturgeon live up to 60 years.

Sevruga caviar:

The eggs of this certain type of fish are small and black. Being the most available is the salient characteristic of this type of caviar. Although its nutritional value is not as high as that of Beluga and Osetra caviar but it delivers nutty and creamy taste with a finish like a sweet ocean breeze.

Sterlet caviar

This type of caviar has light grey to dark grey color pearls, hint of silver and it has mild sweet and nutty flavor. Sterlet is the smallest and abundant sturgeon of the Caspian Sea basin. It is suggested to be served alone just remember to serve it on the mother of pearls spoon. The adult Sterlet reaches the length of 100-120cm and the weight of less than 16kg. Despite of its small size, they are among the most flavorful in the sturgeon family along with Sevruga caviar.
